Roast Pork needs CRACKLING!

Is there anything better than a quintessential British Sunday roast?

I just found this photo from 2021 and was instantly transported back to my mother's table: roast pork with crisp, crunchy, crackling (really, is there any other way?), roast potatoes, veggies from the garden, apple sauce, and gravy - all served on the nostalgic plates of my childhood!

Here in the US, skin-on pork loin is almost unheard of, and it is extremely difficult to source. I confess it was one of the reasons I was most excited to raise our own pigs.
